Broccoli (Brassica oleracea italica) is a plant similar to cauliflower, except that the inflorescence is more spreading and of a different colour. The root system of broccoli is well developed, the stem is short, and the leaves are large, elongated, slightly wavy, with asymmetrical, sectioned edges. In the centre of the leaves arranged in a rosette is the terminal flowering bud, from which the inflorescence develops. Broccoli is a biennial plant, but in our country it is grown as an annual (it flowers in the first year). The inflorescence has the appearance of a bouquet of several green, yellowish or purple flowers. In some cultivars, after harvesting the first inflorescence, broccoli plants form a second inflorescence. The flowers are yellow and the seeds are very small (up to about 350 pieces/gram).
